I posted in the morning thread that I was making Country Side Chicken for dinner tonight and Kjs asked me to post this recipe so here goes.

Country Side Chicken

3 cups cooked rice (I use brown rice but used to use white rice-either works)
1 cup sliced celery
3/4 cup chopped onion (I love it with onion but usually omit it because of husband)
2 TBS butter or margarine, melted
2 tsp. parsley flakes
1/4 tsp. salt
1/8 tsp pepper
3 chicken breasts split (I use boneless)
1 can condensed cream of mushroom soup (you can use light)
2/3 cup miracle whip (I use miracle whip light)
1/4 cup milk.

Preheat oven to 350.

Combine rice celery, onion, butter or margarine, parsley and seasoning into greased (I use a spray) 3 qt. baking dish. Top with chicken. Combine soup, Miracle Whip, and milk. Mix well. Pour over chicken. Bake for 1 hour.

My grandma made this for us years ago and I have been making it ever since.

You know Sharon, I have a recipe from years ago that is very similiar but it also calls for a box of chopped spinich as well. I remember it because I remember the Miricle Whip.

Have you tried the Olive Oil light Mayo or salad spread?

I think with brown rice, light Mayo, and that healthy recipe soup, this wouln't be too bad.
