Here's a nice recipe

    Apple Pie Squares

    3 c flour
    1 tsp salt

    Mix. Cut in 1 1/2 c shortening.

    Beat together and add to pastry mixture:

    1 egg
    1 egg yolk
    1 1/2 TBLSP lemon juice
    7 1/2 TBLSP water

    Pat half of pastry into bottom of jelly roll pan.

    Fill with:

    1 1/2 c sugar
    1 tsp salt
    3 TBLSP tapioca
    1 1/w tsp cinnamon
    3/4 t nutmeg
    10 ~ 12 sliced apples

    Roll out top crust. (It does not need to be in one piece ~ just cover the apples.)

    Bake at 375 for 20 minutes, and at 350 for 30 minutes.

    Drizzle with powdered sugar glaze when cool.

    Serve with ice cream.

    Sounds pretty easy and yummy! Hope this recipe is still around when I get to Florida. Would love to try it. (Course, I could get smart and copy it but that would make sense, wouldn't it?)
