    Soft Sugar Cookies

    1c butter, softened
    1 1.2 c sugar
    2tsp cream of tartar
    1tsp soda
    1/4 tsp salt
    2tsp vanilla
    2 3/4c flour
    1/4 to 1/3 c sugar to roll

Beat butter for 30 seconds. Add sugar, cream of tartar, soda, and salt. Beat until combined. Beat in eggs and vanilla. Beat in as much flour as possible, then use a spoon to mix in the rest. Cover and chill for 2-3 hours. Shape into 1" balls, toll in sugar, place 2" apart on ungreased cookie sheet, bake 375 for 7-8 minutes or until edges are lightly brown. Transfer to wire rack to cool. (wax paper works, too, and they stay a little softer)

Ah, thanks! I can almost taste them! Will print this out and give them a try this weekend - it's supposed to rain starting tonight and continuing through Tuesday.
