    Since squash seems to be a favorite ... here's my favorite squash recipe:

    Curried Butternut Soup:

    1 T. olive oil
    1 chopped onion
    3 minced garlic cloves
    1 t curry powder (or to taste - 1 t. is mild)
    1/2 t cumin
    6 c. vegetable broth - I used canned
    1 large butternut squash peeled and diced
    salt and pepper to taste

    Brown the onion and garlic in the oil. Add spices and heat until fragrant. Add the broth, and squash. Simmer until the squash is fork tender. In small batches, transfer to a blender or food processor and puree. Serve with a dollop of sour cream.

    It is practically fat free ... and reheats well. It smells divine while it's cooking.

    I was starting to put together my cookbook as the party favor and remembered pumpkin bread. This is a breakfast favorite during the holidays. Tastes best with fresh pumpkin, but you can use canned pumpkin. I usually do.

    3 cups flour
    3 cups sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1 1/2 tsp. salt

    1 cup vegetable oil
    4 eggs
    2/3 cup water
    2 cups pumpkin

    Sift all dry ingredients in a large bowl. Make a hole in the center and add the wet ingredients. Mix well. Divide into well greased loaf pans. (3 big or 6 small) Bake at 350 for 45 minutes-1 hour. Test by sticking a toothpick in the center. If it comes out clean, it is done.

    brussel sprout lovers unit!!!!!!!!!!!!!

    Ultimate Corn Casserole

    3 cans unsalted corn drained
    1/2 cup sour cream
    one can cream of celery soup
    8 oz shredded shrap cheddar cheese
    1/2 cup chopped onion
    small jar red pimnetos drained and chopped fine
    1 tsp salt & 1 tsp pepper

    mix all together and spread into a casserole dish, top with one sleeve crushed ritz then drizzle with a stick of melted butter, bake at 375° for about 30-45 minutes, or until brown and bubbly.

    leftovers are even better, mmmmmmmmmmmmmmmmmmmmmmmm

    OK. How did I miss this??? I haen't cooked much lately but here is a recipe we like.

    Cherry Limeaid

    1 can Juicy juice concentrate Cherry Flavor (or the Welch's Cherry Sensation)

    1 bottle lime juice, or fresh limes as needed.

    Sprite or 7up type soda

    Into a glass put ice. Then pour about 1 oz cherry juice concentrate in. Then pour about 1-2 Tablespoons of lime juice (depends on personal taste, I like about 1 to 1 1/2 T). Fill the glass with sprite. Stir with a straw and serve. YUM!!

    Pumpkin Crumble

    Make pumpkin pie filling (I use the recipe on the libby's can). Pour it into a greased 9X13 pan. In a bowl mix 1 white or yellow cake mix and 1 stick margarine, melted. Put the cake mix mixture on top of the pumkin pie filling. Bake about 45 min to 1 hour, until knife comes out clean. Temp is the one on the pumpkin pan, the lower of the 2. You don't start out high, then lower the temp. Just put it in at the lower temp.

    If you don't have the canned milk called for in the recipe you can use regular milk. I have done it with skim, with soy, with 2%, and with whipping cream. Whipping cream gives it a lighter color but the taste is to DIE for.

    Wow, I think I'll spend my day cooking! Here is an easy, easy thing that I always make and give away as gifts.

    CHOCOLATE COVERED PRETZELS
    1 bag of Utz Special Dark pretzels-these are the best
    1 pound of choclate (I buy those round melts)
    sprinkles, colored sugar .......


    Put all the chocolate in a glass bowl,then microwave for 1 minute, stir, and cook an additional 30 seconds.

    While that is cooking, spread out some parchment paper or wax paper on your kitchen table.

    Now take four pretzels, put them on top of the chocolate, take a fork and turn them over in the chocolate(this works better than dunking the entire thing, that tends to get messy)

    Using 2 forks, pick up each pretzel and place on the parchment.

    Repeat.....1 pound of chocolate will make 3/4 of the bag. About 40 pretzelts

    Add sprinkes etc... on top as you go.

    10-15 minutes later they will be hard and ready to eat!!!!!! Don't refrigerate

    I give these to everyone, they are so inexpensive and easy to make!!!You can also dip other things in the chocolate... pretzel rods, dried fruit, potato chips..(peanut butter covered potato chips...yum!)

    I forgot to add that I put some in celephane plastic bags (you can get a package of bags-20 per package- at the dollar store with holiday decorations on them) then I tie them up with holiday ribbons.

    upallnight-That is a great idea! I love to give away homemade goodies during the holidays. My mailman loves me. lol

    My dad is a mailman in the area I live in and last time I made homemade banana and pumpkin bread my mailman came running the minute he heard it was in the box. Dad tells me he was eating the warm bread while Dad and another mailman friend had fast food. I tell ya, mailmen love customers who give them homemade treats. I even get some special treatment because of it. You'd be amazed how great it is to have a mailman friend. No more long lines at the post office for me. lol

    I'll try the chocolate covered pretzels this weekend!

    Favorite recipe for Holiday Fun:

    Take your DF, DW, SO, and have THEM take the kids out for about 12 hours.

    Add 1 cup of bubble bath mix to a warm tub of water

    Light a candle or 8

    Put on some old timey Christmas music

    Soak in tub

    Remove self from tub

    Eat a cookie or 18 with a 1cup cold milk

    Towel Dry

    Relax
    Wake up to SILENT NIGHT

    REPEAT

    I have a quicker chocolate pretzel recipe.

    Lay small pretzels on a cookie sheet. Unwrap and place a Hershey's Kiss on each. Put in 300 degree oven for about 5 minutes, just until the chocolate is soft.
    Take out of the oven and immediately push a chip (any kind, butterscotch, white chocolate, peanut butter, or even the kissables in the Christmas colors - last year I used the dark chocolate with raspberry flavoring it had a red stripe in it) on top of the kiss. Let sit until cool.
