just made this recipe.
Oatmeal bars
1/2 pound butter, melted
1 teaspoon vanilla extract
2 large eggs
1 cup granulated sugar
1 cup firmly packed brown sugar
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 cups quick cooking oatmeal
1 cup semisweet chocolate chips
1/2 cup chopped nuts- Preheat oven to 350*F.
- Mix together melted butter, vanilla, and eggs. Stir in sugar and brown sugar.
- Sift together and add flour, baking soda, baking powder, quick cooking oatmeal, chocolate chips, and chopped nuts. Pour into a greased 13 x 9-inch baking pan and bake for 20 minutes.
I added dried cranberries instead of nuts and also added less sugar. The kids love these and it's super easy.Last edited by Lothlorien; 07-05-2008 at 11:19 AM.

Re: just made this recipe.
Sounds wonderful!!
Have you ever tried using goose eggs instead of chicken? One goose egg is about 2-3 times a chicken egg and they are VERY good. Can't find them where I live now, but in the mid-west they are very common. HUGE eggs and very rich.

Re: just made this recipe.
no calorie count, but I'm sure it's high with the butter. However, since there is no artificial junk in it, I'm loving making these for the kids and they really like them. Missy was telling my friend about them at a birthday party today.

Re: just made this recipe.
Abbey, I'm not even sure that I could even find goose eggs around here. Oddly enough, NJ used to be the egg capital of the USA, but due to all the new housing, that's no longer the case.
