Cover the skillet, reduce the heat, and let the curry simmer until all the liquid is absorbed.</p><p>Add the cooked chicken and stir to mix. Cook until the chicken is heated through about 2 min or so and then serve.</p><p>2 servings</p><p></p><p>Note - I like my curry a little "looser" so I added a little 99% fat free chicken stock when I added the chicken.
