Of course I'm cooking. The cooking isn't a problem but getting the house ready is difficult. It will also be hard because my easy child/difficult child will still be in jail. Oh...he's the green been casserole guy at our house! We will have four from Tallahassee, the four of us who live poedunk and maybe SS and his girlfriend from N.Fl. We have turkey/dressing/gravy/mashed potatoes/green bean casserole, cranberry sauce, pumpkin pie and pecan pie plus a ham. I make mini sweet potato casseroles in the foil cupcake liners and brown mini marshmellows on top. We always eat WAY to many appetizers (deviled eggs, variety of veggies with homemade dill dip, celery stuffed with bluecheese, both color olives). I always make cornbread stuffing with onions, celery and sometimes add cranberries or diced apples/raisens. The regular dressing has mushrooms, onions, celery and diced giblets. daughter in law can't even look at that dressing because it is "oooey". Good Grief! Oh yeah, roasted asparagus and hot rolls are required too. How am I going to avoid CARBS?????? Yikes. DDD
