Does anyone know the old name for Amish Bread Starter?

I just can't remember the "starter" name that was used years ago. One of my sons is making it and had a very French sounding name when he described it. I responded by saying "Is that the same starter as.........blank....." Just couldn't and can't remember the word. Hate to havea senior moment interfere with my very pleasant Mother's Day call. Anybody know? DDD
