I either make carnitas or a pork loin roast with root veggies. The carnitas starts with a pork loin roast cooked in the crockpot (using chicken broth, seasonings and some sliced jalapenos) for 6 hours. Once it's in there, we're FREE! For the sides, you just serve up the usual mexican go-to sides like cheese, sour cream, tomatoes/salsa, whatever you want, and flour tortillas. For the roast, I combine brussel sprouts, sweet potatoes, white potatoes, carrots and celery in a bowl, toss with some olive oil and seasonings, surround the roast in a large roasting pan and put it in the oven - takes around two hours. When it's time to serve, easy-breezy - I just place it all on the table and H slices up the meat, we're good to go. One pan cooking, my favorite!
