Any way to make sweetened condensed milk? Or how to substitute it?

I swear there are moments I could easily mix our house guest (still here, try out successful but won't get his own place before Monday and preferred to stay here instead of hotel) to one of our own boys. :919Mad:No forward planning whatsoever.

He is homesick and it is Thanksgiving in his corner of the world. So he wanted to prepare us a real thanksgiving meal. All fine and good, but boy doesn't know how to boil an egg. His mother did send him their family recipes and he made a shopping list and did shopping early today (okay, there was some forward planning, he could have come up with the idea this afternoon.) I came home early from work to help him (read: to cook and bake everything, this will be very late dinner by the way...) and now we came against this pie recipe, that has sweetened condensed milk in it. Which he didn't buy because he couldn't find it from the store (no wonder because they don't have it) and because he assumed that 'everyone does have it stocked.' There are some specialised baking shops that sell it also here, but a) no time to drive there b) they are already closing for the day. And of course this is his favourite pie and there is no Thanksgiving without it.

I did find one receipe to make condensed milk, but I'm not sure if one can do it from no-fat milk powder, I don't have other kind? Or can you do it from fresh milk quickly?

P.S. He is a sweetie and totally adorable so telling him that he better get by without the pie isn't really an option

post the pie recipe and I can probably tell you what you can get away with doing...

am also checking my ancient cookbooks for substitutions

This version looks reasonable:
[h=3]Ingredients:[/h]
  • 1 cup nonfat dry milk powder
  • 2/3 cup sugar
  • 1/3 cup boiling water
  • 3 Tbsp. butter

[h=3]Directions:[/h]Combine all ingredients in a metal bowl and mix well with a wire whisk (works better than spoon to get it good and mixed). This recipe equals one regular can of sweetened condense milk. It really is best for a single use " don't double the batch to put some aside.

Thanks, IC. We tried that recipe and apparently it at least looks and tastes about right. We will see how the pie turns out.
