I don't have measurements because I saw this on my office tv and was working on a project at the same time. The family loved it so give it a try as it is easy and tasty.

Cut florets into bitesized pieces with-o stem and small (broccoli and cauliflower) wash and dry on papertowels. Wash fresh spinach leaves and dry on papertowels. Mix wine vinegar, light olive oil, fresh lemon juice, salt and pepper to make a vinegrette.

In one small bowl hand beat two eggs. In the 2nd bowl pour Parmesian cheese (grated). (TV star used fresh & grated.)

Heat oil in skillet til ready to fry (not too hot).

Mix florets in the beaten egg. Mix florets in the grated cheese. Place in skillet until light brown and then drain on papertowels. Toss spinach leaves with the vinegrette and make a spinach bed on your salad plate. Top with brocolli and cauliflower.

It's easy, different, quick and yum! DDD

Thanks, that sounds good! I love broccili! I toss fresh spinach in a skillet of olive oil a lot as a side dish so this would add some variety to that.
